Gimme Breakfast!

So… I eat…a lot. Like…all the time. I guess you could call me a “foodie”, but that word makes me barf.

That being said, until not too long ago, I was suffering from a pretty debilitating eating disorder that took over every aspect of my life.Ā  Eventually I’ll post my recovery story, but until then just know that I am recovered, I am awesome, and I eat a TON of pancakes. Here is my favorite, super easy, extra delicious, crazy easy protein pancake recipe!

Green Protein Pancakes

Ingredients:

1/3 cup rolled oats

1/2 cup cottage cheese (I use 1%)

2 egg whites (or 1/4 cup liquid egg whites)

1/2 banana

Handful of baby spinach (trust me!)

little bit of water/almond milk/milk milk to blend

Optional: stevia, cinnamon, vanilla extract

Combine all ingredients in a food processor, or use your handy immersion blender (here’s the one I have: smart stick). Glob it into a greased pan (OR awesome Perfect Pancake) until brown (about 4 minutes), then flip and cook for another minute or 2. I usually drizzle honey over the top and serve a little (read: a lot) of peanut butter. Enjoy! Let me know how they turn out!
